Guess what???... another seafood dish (no surprise there). This manicotti is good comfort food and can be made in less than one hour.
INGREDIENTS
8 oz jumbo lump crab
¼ cup parmesan
1 cup ricotta cheese
¼ cup Italian cheese blend plus extra for topping
2 cups marinara sauce
1 cup frozen chopped spinach
2 cloves garlic, chopped
¼ cup onion, chopped
1 egg
1 tbls EVOO
1 tsp Italian seasoning
1 tsp white pepper
½ tsp old bay
½ tsp salt
¼ tsp garlic powder
7 pieces manicotti pasta
fresh tarragon, for garnish
COOKING INSTRUCTIONS
Preheat the oven to 400
Coat a baking dish with non-stick spray and spread ½ the marinara in the bottom of the pan.
Bring a large pot of water to boil and add the manicotti and cook according to the package directions. In a skillet sauté the onion, garlic, spinach and crab in the EVOO until spinach is steamed and the onions are translucent.
In a medium sized mixing bowl add the spinach mixture and the parmesan cheese. In a separate bowl whisk the egg and add to the spinach mixture. Add in the seasonings and fold in the ricotta.
Drain the pasta and allow to cool for about 5 minutes. Gently stuff the ricotta mixture in the manicotti, add the stuffed pasta to the baking dish. Reserve a small amount of the ricotta mixture.
Once the baking dish is filled with the stuffed pasta, add the remaining marinara sauce, followed by the reserved ricotta mixture and top with some Italian cheese.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 5-10 minutes.
Top with fresh tarragon and serve!
